Red Wattle Swine
Red Wattle pork is quickly gaining ground as an affordable, gourmet pork. Red Wattle are no longer as rare as they once were, making the coast more attainable for families. Red Wattle are a heritage breed with distinct wattles hanging from the jowls (cheeks) of the pig. Oddly enough in order for the wattles to be present another genome must be present in the lineage. And as it is with pork, that's a good thing. The best tasting pork is always comprised of at least two breeds so the best qualities can merge and bring only the best from farm to table. The extremely fine texture, rich " porki-ness" and incredible depth of flavor make it excellent for processed meats, like hams, bacon, Prosciutto and such. The intense flavor of the meat is not lost under the cures and smoke and the results ate truly a taste explosion!
